tools, spare nuts n bolts, spare fluids, tow strap, food n water doesn't hurt either...I used to keep some emergency cash in my truck but I've been dippin' into that lately...there's probably more stuff I missed but that's all I could think of at the top of my head...make sure u got a working jack and tools to change your tire...also helps to have a spare also

This is what i had in my toolbox;
Highlift, small floor jack, couple lengths of chain, 2 tow straps (2"x20' and 3"x30'), tree saver, misc. shackles/D-rings/ open chain links, Toolbox full of the most comon toyota sizes, Readywelder on board Mig welder, 2 sets jumper cables, box of 6013 welding rod, 18v Ryobi cordless sawzall, 2 1' sticks of 1/4"x2" steel, 7qts engine oil, oil filter, a sealed container for used oil, oil dry (just in case), 2 gallons antifreeze, 4 qts gear lube, spare rubber tubing, 1 birfield, spare u-joints, tire plug kit, leather stitching kit, duct tape, zip ties, spare spark plugs, ignition coil and distributor cap, gallon of fresh water, case of mountain Dew, and a couple blocks of wood.
I think thats everything i had in mine. I sold the truck a while ago, so my memory is a little fuzzy about what was in the toolbox. You need that much stuff, but it should give you an ideaof where to start.
I had a lot of stuff crammed in the cab too, but i wont get into that.

i dont think my toolbox would actually hold all of that stuff, the basics i carry with me is spare u joint, 100+ peice craftsman toolset, 2 sets of cables, water for me and antifreeze for the truck, 4 qts oil, gear lube, gloves, extra clothes, come-a-long, chain, knife, tarps, and some other odds and ends, i cant remeber what i usually carry sense its been so long, havent went 4x4in outta town in like a year almost!
i gotta get it together though cause the 80 will be trail ready in a month or so.

It all fit very nicely in my toolbox, and it wasnt that heavy. Gas mileage was still a solid 20mpg.
First aid kit is definatly a must, i didnt even think of that. I keep one in my center console. I also have the big Mag lite, and that is very handy, because it can double as a big 'ol whompin stick. You can use it to knock stuff loose that you wouldnt be able to hit with a hammer.
Another thing that i never, EVER thought of until it happened to me, is to carry a length of hard brake line. I tore a line off of a caliper before, and didnt realize it until it was too late to just vise-grip it off and drive with some brakes. I carry a small, cheapie flaring tool and about 18" of hard line, because i dont like paying for tow trucks. I also carry a two small bottles of brake fluid when i go to the trail. One to collect what i bleed out, and one to pour in.
The only thing with using the high lift as an extraction tool, is that if you are using a smaller tow strap, and you are really stuck bad, it will stretch, and you will not get as far as you would if you had used something that didnt stretch. That was why i had the two lengths of chain. Now, granted, it wont really matter unless you are burried in 3' of clay, but it will take longer, and can make releasing the jack to reset dangerous.
