Dutch Oven Prime Rib

Dutch Oven Prime Rib.

Ok, meat eaters bust out the wallet, get the bar set up and be ready for a fun afternoon.

History: I made this two years ago during a new years camping trip. We were having a lazy day in camp, a few of the guys went out on half day trips, but I decided to stay in camp and prepare the evening meal. I have done Prime rib roasts before in a conventional oven, but never in a Dutch. I used the typical meat cooking method: Sear, slow cook and enjoy. We also had some king crab legs that we wrapped in foil and threw in the coals for an appetizer.

Shopping list:
1. Large prime rib roast (bone in)3-5 lbs (spendy)
2. One tomato…or more
3. Head of Garlic
4. Bottle of red wine
5. Fresh ground pepper
6. Rosemary (optional)

Preparation:
1. Build a big fire
2. Husk about 6-7 cloves of Garlic
3. Take a filet knife or steak knife and poke a few holes (1” deep) in the Prime rib. Insert garlic cloves.
4. Set meat aside, Pour your first drink
5. Watch fire burn
6. Clear a small area close to the fire for the dutch oven and lay out a small bed of coals.
7. Set the dutch oven on the coals and let that bad boy get really hot.
8. Sear the roast on all sides till it is browned (seals in juices), add pepper.
9. Remove dutch oven from coals.
10. Pour second drink.
11. Reduce the amount of coals in the bed so you have the equivalent of about 5 briquettes under the oven.
12. Place oven back on the coals, and put about 2 or 3 coals on the lid.
13. Let the rib cook for about 40 minutes. It will take about 2-3 hours or more to slow cook the prime rib. This meal is best left to someone that will be in camp all afternoon tending the fire… etc….
14. After about an hour put the tomato in (cut the top and bottom off),
15. Pour about a ½ cup of red wine over the rib, toss in the remaining garlic.
16. Check the rib every 20 minutes or so and braise the meat with the juices.
17. Continue drinking.
18. Add rosemary whenever.
19. Have a meat thermometer and test the roast after 90 minutes or so. Cook till you are 5 degrees below the desired done-ness. Remove Dutch oven from coals and let rest for 10 minutes.
20. Enjoy. The tomato should completely dissolve.

Epilogue: Prime rib is the best camping food you can get. the dogs are happy because they get some fat juicy bones, and the people are happy because it is Prime Rib baby!

I forgot to indicate when to "Kiss the baby" that is the cook gets a few tugs off the wine bottle

hahahaha Dutch Oven, isn't that when you're laying in bed with your gf and you fart then quickly throw the sheets over her head so she has to smell it, lol sorry continue on with this thread...
