Which temp sensor

1 in 3 trips to work (10 miles one way) temp gauge goes past middle where it normally runs and keeps going up . If I pop it in neutral ,shut key off then restart, then goes back to norm for the rest of trip.which sensor or other ideas

I suggest you put that info in your signature. We are not very nice to Escalade owners - LOL!

Could be many things.
This is for a problematic display: https://www.yotatech.com/forums/f116...ge-fix-271152/
Could be a bad sender that shows over-heat while engine is actually at proper operating temp. Need to take that out, inspect, clean, test. It's rather hidden (under the intake manifold below?)
Could be a problem with wiring?
Could be a problem with your thermostat where it is not properly opening or closing. You can easily take it out, inspect and perform a test.

Thanks I did flush coolant system when I bought truck and change thermostat , then changed it again when this problem occurred with a more expensive one . I did replace temp sensor you pointed out and thought problem solved ,then It did it again after a few trips . I'm sure it's not overheating just annoying now. Thanks again.

Then:
1) Test sensor signal per FSM, and
2)See link on problematic display above...
