I just replaced my driver's side gasket not too long ago. The pass. side isn't leaking so I lucked out. Personally if the passenger side isn't leaking I'd leave it alone.
AFAIK you have to remove the plenum; there aren't any shortcuts. It can be done w/out a FSM but make sure you label everything and it wouldn't hurt to take pictures. Don't forget that you'll also need new plenum gaskets when you go to re-assemble them.
Like I said...if it's not leaking leave it alone lol
I've been putting off my PCV valve just because it's so dang hard to get to. Remember to replace that as well if you decide to do it. I read either here or on 4x4wire that it can be replaced w/out removing the plenum but it takes a lot of patience, which I don't have

I pulled the plenum off to replace both sides, it wasn't that hard although I have the shop mannual so that helped alot, I ended breaking a bolt off in the air intake manifold and had to put a new one in which led to replacing the timing belt and the waterpump with all the front oil seals redone. It was tough although I only worked on it a week on and off, sorry to scare you but I have heard off the valve cover gaskets going well it isn't too hard although I would replace both sides just be careful taking the four bolts off the plenum, and use anti-sease when you put them back in, should be fine

I still say leave the pass. side alone if it's not leaking though. I mean- does anyone actually replace any gasket unless it's leaking? Not really...

eh, if I make it 2 more months without having to take the intake off I'll be happy. It's not like you save any work by doing them both at once. There's practically nothing you have to remove to do the driver's side.
