How is the condition of the cooling system? Radiator have alot of build up in it?Timing can cause heat issues. I am not familiar with the 3.0 but just going with common issues.

You need a clean radiator. Internally and externally. And you need air flow across it. Make sure the fan clutch is working.
If engine was recently rebuilt you would think the T-stat would be good. Was it replaced?
Proper coolant/water mix. Not straight coolant.

As far as I know t-stat was replasted and rad looks good and clean. I did see this moring my fan shroud was missing a clip to hold it to the rad. dont know if that would make a difference

If your radiator hasn't been serviced in a while, it may be due. They can look clean and still be plugged up internally. Usually the lower ends of the tubes. The tops can LOOK clean. I had one that looked clean but I could only feel a few tubes that were hot. The cold ones had no water flowing through them.
An auto trans will generate more heat from the converter on hills, normal to have temp gauge go up after shutoff. The coolant isn't circulating but, it should drop down quickly after you start it.
Getting hot at idle USUALLY means you are not getting good airflow through the rad. Loose belt, failing fan clutch, or lack of a shroud. Once moving you have ram air by going down the road.
A fan clutch is cheap insurance and so is a radiator service. Especially if you just had the engine rebuilt. It would suck to overheat a fresh engine and blow head gaskets.

long as the fan shroud is there and not gone or busted to peices that shouldnt matter one clip aint gonna make a differnece i dont think. i had the same thing just happen to me with my 86 4x4 that i drive on the street. i ended up putting just a little cooler thermostat in it not much just ten degrees and put a new radiator in it cause my old one was not getting good flow. if ur radiator isnt clean inside an out it will cause problems. mainly worry about the inside. u dont want that water pump to go out. i would check radiator first if i were u. u can take cap off when cool and turn heater and look for flow instantly if not its clogged somewere. if it looks old i would teplace it. its easy to do and is not that high. i spend 120 on a brand new radiatoe at orielys
