The reason you can only find a 22R header for trucks 1981 and newer is because the 22R wasn't put in the pickup until 1981... Your truck originally came with a 20R which is why you cannot find a 1980 22R header
The trucks are virtually identical so you should have no problems with a 1981+ header

Pacesetter
I also find same fitment...
I see adds for pacesetter showing fitment for 20R and 22R is the same for 79-83. Here's an example:
http://www.streetsideauto.com/p/pacesetter-70-1080/
or google/bing
pacesetter 22R 70-1080
That part number shows 20R and 22R compatibility. An ebay post from KMJPerformance for the Pacesetter 70-1080 shows OK for 1980 models, and 22R 1983 models. So should be OK for your 22R in a 1980.
Here's another vendor showing the same compatibility

It looks good to go at least for Pacesetter. The bend seems compatible for all of pre '84 engines, models. I guess the exhaust ports are the same geometry. Downpipe may be slightly different after the connector pipe, but you can custom fit after that. Critical thing is sealing it up at the head anyway. I suppose you'd be wildly lucky to have other stuff downstream line up properly!!

I just picked up a 22R engine that was supposed to be running when the truck's frame broke. It has a carb on it, but the guy told me it was out of an '87 !? I thought 22RE started about '84-'85 on all of the 4x4 trucks.
I looked at the headpipes dropping out of the manifold, and there are two, just like mine ('83). I have not inspected closely for any identification yet. I know I can fit this engine after rebuild, but I wonder how many other things will be different. I plan to swap most things over, but this engine is complete, so I'll have spare stuff.
Mine is an '83, and he sez this is from a '87, but it has a carb. Maybe I have the carburetor/throttle body transition wrong.

Oh, I will look for this (search) but is the oil pressure sender right below the filter? It looks like that's where I have a leak (I hope!). Much easier fix than oil pump, and I need to get inspected for registration!!!
Fixed the leak. It was a LOOSE BOLT!!!! How Lucky!
Here's the fix:
