overheating and discouraged

Newbie here with a problem that is giving me fits...gotta a 95 Yota with 3.0 v6 auto tranny. Just had the gaskets replaced (all of them) last week. When I get the truck back, my power is restored and Im not losing coolant anymore, but now she overheats on me. And the weird thing is that she doesnt do it all the time, just every once in a while. I've replaced the thermostat / taken it out, replaced radiator cap, back flushed system looking for clogs, and nothing seems to work...I think it may be the waterpump, but like I said it doesnt overheat all the time. How do I know for sure its the waterpump, and if its not, what else could it be...Thanx for all your help
P.S. took the truck back to the garage that replaced the gaskets and they told me it was just a air pocket that would work itslef out!!!

Headgaskets, right? Overheating is a common problem if the headgaskets were put in backwards. It's easy to put them in backwards and not know it. Try searching for more info on that here and at 4x4wire.com.

The air will not work itself out. You have to take the top hose off and pour coolant down into the engine. Yes, the headgasket could be on backwards, but I thought the engine would always overheat this way. One other thing to try. I had an overheating problem for a while. I tried everything you have with no help. The last thing I tried worked. It was the fan clutch. I put in more of the silicone fluid and the engine hasn't overheated since.
Mine would only overheat going up the mountains or when the engine was straining. Here is a test you can do to see if it is the clutch. When your engine is up to operating temp, turn it off and try to spin the fan. If the fan spins more than 1/4-1/2 turn you need to rebuild the clutch. Its very easy/cheap ($15) to do. A new OEM fan clutch is like $200. I also tried an aftermarket fan clutch from Autozone ($50) and the engine still overheated. It was a pice of junk.

Take it back and have them fix it for free.
