cat removal/ cutout install

i have 2001 4runner LTD with 2 cats. i plan on getting a set of headers and removing one of the cats. in the gap where the cat was i am planning on intalling a cutout with a turndown installed for offroad rumble. i was planning on doing an exhaust system but i do a lot of driving so i dont want the constant rumble. so my question is wich cat can i remove with out throwing a code and what cutout should i use? i would like the ease/ speed of a cylinoind but wouldnt mind the reliability of a manual pull cable.
THNKS for your time.
