Chop and Go Camping Stew

Chop and Go Camping Stew


Serves 5-6
  • 1 1/2 lbs. Stew beef (chunks)
  • 4 medium potatoes, cubed with or without skin
  • 2-4 cups baby carrots, chopped
  • 1 white onion , thickly chopped (if too thin it will disappear)
  • 4 celery stalks, chopped
  • 3 beef bouillon cubes
  • 2 packs brown gravy mix (the dried McCormick’s packages)
  • Salt, pepper to taste

In deep stew pot, cook beef to medium rare. Add the potatoes, carrots, onion, and celery to the pot. Add enough water to cover all the ingredients with a 1/2 inch of water. Add both packages of dried brown gravy mix and beef bouillon cubes. Let simmer for 30 minutes, stirring often. Salt and pepper to taste.

This is a great dutch oven recipe. They're pretty cool once you figure them out. Typically you pre-oil the oven before you go on your trip. To cook with them you use charcoal briquettes which go ontop and below the dutch oven.

Never used one, but I would like to try one out some time for a future camping trip.

I was suppose to hit the mountains today (Greenwater FS road 73 area) as I took the day off from work to go camping, and make it a long four day weekend.
Woke up to rain here this morning.

The mountains are worse from what I have been hearing, more rain up there, and possible thunderstorms.

Tomorrow looks more promising with local temps being around 70, so I hope to push off tomorrow morning.

Typical Memorial Day weather though, I should have taken next Friday off.
You watch, next weekend will be killer camping weather.
