A good place to start reading up and learning what the various swaps entail is in the Engine Swap Talk forums:

It is going to depend on what you are after and is mostly a personal thing. If you are after just a Toyota motor, I wouldn't know a 2r or 3r if it landed on my head. Never worked on one or drove one so no idea about them, sure they are great, I just don't know them. I prefer the small block Ford motors and a soft spot for 318 Dodge. Would love to have a OM617 Diesel for the mileage and the 3.4 is a great motor. Each has its pros and cons. Some have better aftermarket support and others. I am not a Chevy motor fan, but they have tons of options. Motor swapping is something you really need to do a lot of studying in and having experience with one motor with how it has treated you in the past is something I would take into consideration.

Read the engine swap forums.
3vze will be the easiest swap, period, since you already have it. Known for reliability if maintained well. 3.4l 5vze will be the next easiest swap since you don't need to remake engine mounts , just do everything else. There are kits these days it's so popular. After that all other swaps are basically the same since you're dealing with new mounts, wiring, adapter plates, etc.
