The ones I use are waterproof. At least until I bust them up on the rocks. They are commonly referred to as "tractor lights" and have a rubber surround and shock resistance built in.
They tend to look like this;

Unless you make a mess of the wiring, it is insulated by the insulating jacket it has. Your connections should be well sealed. but otherwise a carefully wired set up will not have any problems. I submerge mine regularly.
I use some quick disconnects on mine because I mangle an average of one light per month and am always replacing them. Also, they don't like to be submerged when hot, even spashing puddles up on them when they are hot will shatter the lens.

If you solder the wires and then put some heat shrink on there they should be fine. Don't forget to put the heat shrink on the wire BEFORE you do the soldering.
