IMO it would be better just to swap the whole motor as the head and cam characteristics are a little different on fuel injection than carb. Plus you will have the same amount of wiring to do either way.

If you are going to change head and cam then put fuel injection on all you are keeping is the block. IMO this is pointless when you could just swap the whole motor and not have to pull the head off or any fuel injection wiring. I think what you are saying would me a lot more work than necessary.

You'll have less time swapping the FI motor over to the older chassis. You will have some re-wiring to do as well as the moving the ECU over. Not sure exactly but the fuel pump out put between the two motors may be different as well as the fuel lines.
It might be worth finding an aftermarket or custom wire harness to help you do the swap.
