Options and Budget for swaps?

Hello. Was looking for a little guidance. I have been driving my 92 toyota single cab automatic for a few years. It has a nice condition frame and the IFS was gone through and mostly replaced, as well as shocks, starter,radiator, etc. Body needs a little work but its fine.The engine is high miles and I recently picked up a Subaru for a daily driver. I want to do a swap on engine and possibly transmission on the truck to finally have a "new" truck. I have a local shop who does lots of custom trucks and swaps to do the labor, but it will be up to me to get parts.

I would like the truck to be able to tow drift boats, camping, mountain roads, towing small trailers, and also road trip at 60-70mph with decent economy. What are the good options for the swap. I live in Spokane Washington so naturally im considering something from sunwest automotive. But are there other engines or possibly engine and transmission combos to look at? What sort of budgets do you think are realistic for the swap (parts cost)?
