Anything else I should do while I have the intake removed?
I am upgrading from a Weber 32/26 to a Weber 38, I went ahead and ordered the entire intake manifold with carb and the de-smog block out kit to clean up the engine. I have to say that taking the old intake off was a b*tch and took me a lot longer than expected because I had to remove so much other crap in order to get to all the nuts. I had to remove all the hard fuel lines that were attached to the intake, remove even the oil filter just to get some extra space.
I am just curious if there is anything I should take advantage of doing while the intake manifold is off? I will go ahead and remove all the emissions before putting it back on, but are there any pointers in regards to putting it all back together? For example, should I reuse the same hard fuel lines that bolt on to the stock intake or is there a better way to run new fuel lines? Any special cleaning I should do? Just curious if anyone else tackled this and has some pointers for an easier install.

You will be much happier putting it back on. Sounds like you have it covered. Clean them ports while your there. Make sure the water jackets are super clean. A real oil pressure gauge is helpful. Why the change in carbs?
