I have mostly a 3 inch on my 3.0L TD but one section is still 2.25 or 2.5 and I will be changing that in the next month and will be able to see if there is a difference. And its not that noisey. You can tell its a diesel. But not overly noisey. Oh and no muffler either. I'll get a pic up of it when I get a chance but probably wont be tonight.

It sounds like you're going to have the same kind of restriction that you'd running a 2.25" exhaust.
Think of it as water running down a hose. If there is a 2" restriction in a 3" hose, you're flowing at the same rate as a 2" hose.
I'd do a 3" DP to a 2.5" exhaust if you're on a budget, you can always go to 3" later if you want... It's hard to route 3" exhaust.. it's pretty big.
A turbo will really keep the truck quiet. I ran a turbo, a cat, no muffler for a long time. No one noticed a difference from a stock truck.
