1991 Pickup 4x4 Getting Warmer on Highway

Hey everyone, just finished up my headgasket job on my 91 pickup 4x4 22re so I’m finally able to drive it. Everything was running smoothly for the first few days but today on my way to school my temps went up to about half way on the gauge while i was on the freeway, took next exit and temps immediately dropped. Only experience I have with cars running warm is in the opposite scenario, temps rise when stopped and drop while driving. Previous owner had a new radiator installed but I also found this radiator stop leak stuff that I know he used so maybe that gunked the radiator up? I used an infrared thermometer and that rad ranges from 100-130ish at the top down to 90 in the middle and 80 at the very bottom. Side note, is this normal running temp? Thanks a lot guys.
