Carburetors & steep angles

Alright so I'm reading up on EFI conversions and all that good stuff and I keep seeing "carbs suck for offroading because they sputter and stall at steep angles".
I'm not a professional rock crawler or anything, but I've had my experiences and have never had this problem. The only time this may happen is if I push in the clutch and let the engine idle through a whoop section. As far as inclines go... never been a problem.
Is my AAP system working more than it should or something? My choke doesn't work if that be the case. Starting her up in January sucks big time.
(pump pump, starter whine, sputter, stall, pump, pump, pump...)

theres only one bowl on our carbs... its in front. On inclines it just floods.
I was planning on doing an EFI conversion (got most of the parts right now) but decided not to since I've just learned to live with it, stay on the skinny enough it won't die, just burn rich.
