very low on gas?
could be a bad ground
check for moisture and/or loose wires and plugs-ins at or around the AFM, ignition coil and ignitor, and the distributor

Check the ignition switch itself. When it "shuts off" is it as if you turned the key to the off position or just to ACC, I.E. (stereo working and lights without alert buzzer)??sometimes the contacts in the igntion switch can become worn and have an intermittant open circuit. ( Just in case-The ignition switch sits behind the keytumbler that you turn when you start the truck)

While you're replacing the engine, keep an eye out for any problems that may have caused this. The only place I know of that could have caused this due to moisture and then be ok afterwards, is the distributor.
