Do a compression test. Check oil for coolant and coolant for oil.

We need LOTS more info from you about what is going on, what its doing, or not doing, to even try and diagnose this problem.

+1
a problem well-stated is a problem almost solved.
Help us see, hear, feel, smell what you have in front of you.
Tell us what you see (smoke? leaks?), hear (engine sounds rough?), smell (smell smoke? unburned fuel?), feel (engine smooth or does it shake? How does transmission feel? Slipping?)

you know that the 3.0 head gaskets tend to go right about around 160-175K in these things like clockwork.

Me, too. Man, it can take like 4-5 seconds to get up to 80mph!

Seriously, there are those (Philistines!) who claim that even a brand-new 3VZE doesn't have a lot of power.

As to low oil pressure, if the truck is new-to-you the oil pressure gauge is an unknown. You'll need a known-good shop-gauge AND some idea of what pressure you should expect.
