runs rich at random

i have a 3vze out of a 91 in my 93 and its a fresh rebuild. pistons rings bearings gaskets. did not replace injectors valves or cams because everything was still checking out ok on the clearances and such. every now and again ill be driving and out of nowhere the engine begins to run very rich, to the point where the truck stalls and will not start. what could possibly be the problem. im tired of trying to chase it down. didnt know if anyone else came across this.
