Is the blower motor cutting out, or does only the A/C compressor cut out?

If it's the compressor, there are not any switches that I know about that would fix this problem. If it's the blower motor (the fan) cutting out, it's likely the resistor switch, or the motor itself. If it's not the fan motor -->

1st: Visually inspect the belt (condition and tension) and A/C clutch with motor off. Then inspect the A/C clutch at idle, with A/C off, then on. If that looks good ->

2nd: Check the refrigerant pressure. (Or have it checked at a shop.) If that is good ->

3rd: Inspect the compressor/condensor.

If you remove the glove box there is an idle control box mounted on top of the a/c unit under the dash, you can adjust it a little until you get the a/c to stay on at idle.

I had the exact same problem where my compressor clutch would not engage while idling and would work when driving(high rpm).

To fix it, I had to turn a knob on the located on top of the Cooling Unit. It is located behind the Glove Box. Just turn the knob to "LOW".

Here is how it looks like:

First I'd check the a/c idle up is working properly- too low idle speed with the compressor on could cause the compressor to cycle. Then I'd check the refrigerant charge- a low charge could cause the pressure to fluctuate a bit at idle possibly tripping the low-pressure cut-off switch.
