I had a guy use a spindle mount style hinge that I got from Rockstomper when he converted my Marlin bumper to swing out.
I have since found that a spindle mount is not the way to go especially if you are going to have both a spare tire and gas can. There are several reported cases of failure:

turns out the spindle can become fatiqued. one guy lost a his tire on the freeway

When I get the chance I will be redoing my swing out using a double shear design similar to what EMS off road offers

as far as your idea coming through the stock bumper, that is kind of a cool idea, I would make sure the sub frame is substantial and tied to the frame.
