A company called MMATS makes some amps stable down to .5 ohms.
Also, they make a killer sub called " Juggernaut " made purely for DB's not SQ (decibels - sound quality)

Couple reasons they do that actually.
Main one is they dont want to see you come back to the shop because your amp keeps overheating from all that Bumpin at the low Ohm loading... People who cant install their own systems dont seem to understand the limits of their equipment.
Most people dont even know how to change a fuse (or diagnose one as blown in the first place) all they know is "its broke and its that stupid stereo shops fault" Fried amps go back to the Manufacture for repair, and usually the shop pays for the shipping, and if they installed it, have to R and R the amp. And they have to spend time dealing with you, not making money, and your obviously unhappy.
Theyd rather have the system perform flawlessly for you instead of wasting time with an upset customer, especially if they then find out they have to re-wire it (not making money) to show a lesser load to keep it stable, and the bass isnt as "kickin" as it used to be, and customer is even more pizzed off. Customer then badmouths equipment and store.
Also when you bridge the amp or start dropping to a lower ohm load on an amp, you start losing Dampening power/control (which is speaker control) and things can get a little sloppy to a discerning ear.
anyway.. thats how that works.
