Sounds like you got mud on the inside of your rims not the tires. Pressure wash the insides of your wheels. I tend to do this from the front or back and to the side a little, makingsure to spray out the wheel really good.

What model truck and are you running stock rims? The stock rims on my '93 were a horribal design that was really good at holding in mud and ice causing the tire to go out of balance. It is most likely the wheels fault and not the tire. It is always a good idea to pressure wash your rig before the mud has time to dry on (at least in our northern clay). Wash the inside of the rims well. The Toy aluminum rims or aftermarket rims are much better at clearing mud. I bought a set of plain black AR767 style rims and they are much better.

Mud inside the wheels itself, also you may not know this but us 3rd genners have a problem with the tires being balanced due to it being lug centric instead of hub centric.
