There are different types, so make sure you get the "right" one, which if you're going to carry it in a vehicle, should probably be a Class B. You do NOT want a Class A extinguisher, which is just water. Shooting water into a gas or oil fire will usually do nothing except spread the fire.

Just get a ABC extinguisher. Good for ordinary combustibles (A-wood), flammable liquids (B-gas,etc), energized electrical equipment (C- obvious). Dont worry about getting one with metal valve. Chances are you will never use it anyway, and the cost to fill is too much versus just getting a new one. Just buy a $10-20 Wal-mart special. The cost to fil a 5-10lb extinguisher is about 4-5 times more than it costs to buy a new one.
As for mounting. If you have a regular cab truck...behind the seat. Otherwise get a small one and mount just in front of driver seat out of way of feet.
