Over heating/operating temps

I swapped a 99 3.4 w/ 70k mile (±) into my 88 toyota.

What are the normal operating temp for this engine? ~200F?

On my first trail run out my truck overheated to the point it threw a code. BAD! I thought I was running a normal temp but it ends up my temp gauge wasn't correct . Ends up I had a leak or something and my radiator wasn't full. However, it never leaks when idling in the shop.

Now, after I replaced my thermostat and topped off my radiator it seems to reach 215-219 (vis OBOII) easy after a short time of just doing a test drive for maybe 10-15 mins and stays around 200 idling. This seems "ok" but makes me nervous to why it happened in the first place. The reason I say this is that my upper radiator hose doesn't seem to have pressure at all now. I'm thinking I've either got air in my system OR my water pump is shot.

Your thoughts!?!?

I have since ordered a mechanical gauge, I'm done with the rest.

The 5VZFE water pumps have been known to fail before the timing belt needs replacing. Mine runs about 190 around town with a 160* t-stat. In the hottest part of the summer running with the AC blasting and a full load at highway speeds I run about 210-220.
