I could find a crap load of sites that sell Chevy and Ford body panels to fix rust. Are there any companys selling anything for older (1979-1983) Toyota's?

Is there just not a big enough demand for this stuff?

I was looking for steel replacement panels, such as cab floor sections, cab corners and maybe bed sides. Guess I'll have to have them fabbed up.

Try JCWhitney.com. They have floor pans complete, cab corners and 16" X 48" rear cargo bed repair panels. When you get to the JCW site do a search by vehicle and then when you go to body parts it will list the ones that fit (for me) the 79-83 trucks. I am still looking for the roll pan. I am pretty sure you can get them at Keystone, too.
