Brakes overheated, new calipers and rotors.. what the?

So I recently installed new calipers and rotors. When I bought the car the drivers side caliper was toast. One of the two pads had gotten stuck open, so the other caliper compressed until it was practically destroyed and was fully leaking.
Over the weekend I was going down a long steep descent, used a bit of engine braking, but a lot of brake braking, and started smelling burning. The brake also felt a bit more spungy than normal. I stopped and the caliper was smoking. I poured some water on it and it boiled. I thought maybe there was still some air in it, so I bled it a little bit, let it cool down a bit, and kept going. Brake felt a bit better and seemed to be all right.
What causes caliper overheating? Could it have been air pocket? Should I be concerned?

Did you replace the old dirty brake fluid in all the lines, err at least the fronts? Old stuff loses its ability to absorb the heat and water also loves to contaminate.
