Yes, it is possible to remove the cable from the speedometer cable assembly

I replaced the old speedometer cable assembly because it was making too much noise. I decided to see if I could take the old cable apart. It's actually possible. I used a heat gun to the heat the plastic part that attaches to the speedometer side of the cable. It came off fairly easily without too much heat. I found the end of the cable had a plastic piece that is attached to it. I then heated it up but it needed a bit of effort to separate it. It went flying somewhere in my garage but I was able to find it. The cable was quite dry when I pulled it out of its case. I tried spraying lithium grease into it but obviously it wasn't enough. With it apart it can easily be greased now. I'll have an extra cable if I ever need to replace it.
I knew there was a way to take one apart.

Thanks! I might do mine. It only makes noise when it’s really cold out but bounces a bit at low speeds.

Good luck. I hope it works out.
I should add that you don't grasp the plastic piece on the cable. Rather you should pry with something like pliers from behind the piece where the washers are. It takes some force so be prepared to look for it when it pops off.
