What about the oil pressure sending unit? Have you checked that?

x2 and I think some of your carb problems may have to do with vacuum leaks. After warm-up (assuming the oil pressure issue is resolved) spray some starter fluid around the outside of the carb and see if it stumbles or raises idle, make sure your not spraying in the carb. If nothing changes there's no leaks.
As far as the oil gauge not working, did you replace idiot lite gauges with an SR5 guages? The oil pressure sending unit will not work.

Assuming that is at idle and cold conditions, I don't see where you have any problems. Might even be a bit high?

60 lbs. is a little high for idle... should be more like 15 or 20 (thats really all this engine needs at idle). Now if you were driving, with RPMs above 1400 or so, I'd say 60lbs. sounds great.

60 psi oil at idle when cold ... what weight oil?
It does sound high, but not too much. the bypass opens at 75 psi, iirc.
It should be down around 10-15 psi when fully warmed up.

How's the carb coming along?
