What about head gaskets? and other seals and gaskets I will need for the rebuild?
Does the dealer replace head bolts? I think the Haynes repair manual claimed you should reuse them.

I don't think reusing head bolts is a good idea. If they are stretched out (likely at this point) you will probably blow a headgasket in the very near future and have to do this all over again.
While I have little experience with Toyota gaskets, my experience from working on other makes is that the OEM seals are almost always superior.
Bottom line: spend the extra money, do the job right the first time, it will save you headaches and money in the long run.

I will always use OEM stuff when it comes to seals. I will never re-use head bolts even if the manual says its ok.
When I got my Celica's top end rebuilt, I went all OEM Toyota except I went with ARP head studs, since they are stronger.

11115-65033 head gasket $51.50
90311-42024 cam seal $4.32 ea x2
11213-65010 valve cvr gasket $8.71 ea x2
13568-69075 timing belt $23.35
90311-40022 crank seal $4.32
90311-92006 rear main seal $16.08
