Hiccup at WOT?

On my '87 (carbureted) truck, there's a hiccup and loss of power at Wide Open Throttle (WOT). Mostly noticable going up hills at freeway speeds. My tendancy is to leave it in 5th gear and just just cruise up the hill. The truck accelerated awesome with the throttle 95% open, but if I push the pedal the last few millimeters to the floorboards, there's a hiccup and power loss. Power is regained by simply pulling my foot off the gas just slightly.
The only engine modifications is an RV cam.
Has anyone else experienced this or has any ideas why I can't go to WOT?
Thanks!

Maybe it's running out of fuel at higher RPMs? If so, is it possible to adjust the carburetor to compensate? Or, would that just result in poor gas milage?
