What's normal H2O temp for 22R?

My truck is just sitting now, haven't been driving it, I cranked her up today and watched my autometer gauge go up to 210 before I shut her off. I know thats not right, but I need a number to shoot for after I change the radiator, cap, and hoses.
If I decide to switch to an electric fan, I can mount it up to say a Pep boys brand radiator right? I don't need some fancy ass, expensive Fluidyne core do I?
Thanks, Wes

I'm pretty sure for a carbed motor its a 180* thermostat, 193* for EFI 22RE. I don't know about electric fans. Never heard of 'Thermodyne cores'.
