which tire for rocky conditions, but not too loud on road?

I am about to pull the trigger on a new 4Runner, and am looking at the BFG AT's and the Goodyear MTR's as my 2 tire options. I will be 95% on road, with bi-monthly trips 7 hours one way to our ranch in West Texas. The roads out there are very rocky, and I have witnessed several flats in the past year, mostly due to a rock or one of our great desert shrubs puncturing the sidewall.
So I really have 3 questions -
1. Which of these tires has the toughest sidewall, and generally the toughest for dry, rocky conditions?
2. Which of these tires will have the longest tread life considering my situation?
3. What do you think about the noise vs. grip trade-off on these tires? I don't want any loud humming for that 7 hours of 80 mph...

Please mention any other tires if you think they compete with these...

I love my BFG's, can't even tell I have bigger tires on the freeway. They do great on the az rocks too!

I thrashed my BFG KO's on my 98 Tacoma. And, as you know, the desert is not forgiving. That is where I did my off-roading. The KO's never let me down for 20K miles (until I sold the truck).

The wear is good, the sound is normal, and like I said, they perform off-road.
