Normal water temperature

What is the normal operating water temperature? My car has been taken a long time warming up to normal temp reading and many times it sits slightly below the middle mark. I recently bought a scangauge and my water temperature at normal operation reads between 170-180, rarely it reaches 190F.

I'm suspecting a sticky thermostat, is that a good assumption?

That sounds like the correct temp to me. All my rigs do the same thing.

My scangauge says about the same areas, it reached around 190F once at a long redlight, but dropped back down when I started moving again.
