Baffles under valve covers

What are their purpose?

Was gonna get some extra valve covers powder coated but I'm worried about getting blast media under them and it not coming out and getting in the motor.

They're riveted on so I could remove them but probably not wise as I'm sure they have a purpose. Anyone know what it is?

baffles are to box out the oil for the breathers/pcv valve.

Just plug the PCV hole and do it! Be careful, but it's still totally fine
