The Kentucky Derby Scramble

Serves 5-6
  • 6 slices bacon
  • 6 eggs – beaten
  • 1 small can white corn – drained
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1/4 cup chopped pimentos (HOT cherry peppers) Use less if you’re not a fan of hot food.
  • Salt, pepper to taste

In a skillet, fry the bacon and set aside. Drain all but several tablespoons of the bacon grease, in grease sauté the green peppers and onions until tender. Add drained white corn, chopped pimentos, and beaten eggs, mix well, cook until eggs are set. Top with crumbled bacon. Serve with a thick piece of whole wheat bread.

Can you just send me a copy of all your recipes in a book form?? being a single guy liveing off fast food this would do wonders for my kitchen and wallet.
