I'm going to have to agree with everyone else, only cause it's your first ride, and it's going to be a DD
If it was a trail-rig only, I'd say go for it, and slowly put it together; but a 350 swap into a DD?
I think you could do a fresh rebuild with mild hop-ups like boring, cam, header, maybe some porting to the head and intake, and be satisified, for a lot less than $2k. And it'll probably be a lot more reliable than a regular ol 350, unless you bought a brand new crate motor to drop in, but I garantee that'll put you over your budget before you even address anything else

Last +500hp diesel I "saw" was a 12 cylinder Detroit in an older Kenworth "wrecker" (heavy tow-truck), in the early 90's. I'm not saying they don't make them any more but... as I alluded to, most over-the-road semi's aren't even really anywhere near that: 150-300hp... and the Cummins, Navistar (International Harvester) or Duramax (Isuzu) used in the Dodge, Ford and GMC/Chevy trucks aren't pushing near 500hp either.

ever thought about something a little more practical..like a 4.3 chevy v6..or a buick V6??...not as much HP as a 350..but still DAMN good numbers..i know mine will be somewhere around 190-200hp..(4.3 bored, with a cam and all that, high rise intake with a 4bbl carb)

yea a TBI or a CPI vortec will show much greater numbers with those mods..mines just going to have a rebuilt quadrajet 4bbl...im not looking for a high horsepower motor..it wouldnt bother me to put a rebuilt stock 4.3 in there..just as long as i got more power than that danged ole 22R i'll be happy...the only reason im even going for this 4.3 is because i know the guy that built the motor..and he knows his stuff...of course he did manage to crack both heads within no time...idk how that happened..kinda has me worried though..lol

Assuming a flat torque curve (say an electric motor), horsepower will increase with rpms, but torque will always be the same no matter the speed.
But I'm just being nitpicky
