Thermastat temp

I am replacing my thermastat because I think that its bad. The gauge never moved up more that a hair over cold. I grounded the sensor wire and the gauge works, checked the resistance on the sensor itself and its good so im changing the thermastat. What temp is OEM? I read the FSM and says that Opens @ 190 and the guy at the parts store gave me a 180. Should I go back and get the 190? I live in So.Cal and its my daily driver. I drive about 35miles in traffic oneway and 35 no traffic. Also he gave me the paper gasket, should I have the one that is rubber and fits around the thermastat itself???

You need the gasket that goes around the thermostat, not the paper one. If the thermostat doesn`t fix the problem the try replacing the temp gauge sending unit, they can go bad and cause the gauge to not read right, i had this happen to me and a new sending unit fixed the problem.
