Shock and Coil Input

Shock and Coil Input
I settled on bilstein shocks to replace my STILL STOCK ones:

Does anyone have any experience with these? I'm hoping to improve the ride a bunch and have read countless good reviews about bilstein shocks in general.
Also, I am fairly set on old man emu coil springs for my rear, but I can't find any that don't provide a 2" lift for the back end:

Many people seem to notice a rear end sag that I don't really notice:

Maybe it's just me. Anyways.. Would you guys recommend old man emu coils with the 2" lift? The site says I would need to adjust my front torsion bars accordingly.

PS: Just out of curiosity, when is there a necessity to replace torsion bars? I've always been told that they shouldn't need replacing.
