Driveline Lubrication

I have had my '94 Toyota pickup for the past 6 years and have put just over 50K miles on it. In that time I have only lubricated the drive-line once or twice. I am in the process of changing out my tranny, differential and T-case fluids and thought I might as well lubricate the driveline too before the weather gets nasty this winter. My question (albeight a stupid one) is how do you know when to stop pumping grease into the u-joint and slip yoke zerks? Also, I know that Toyota recommends using both a moly or lithium grease depending on the joint but historically I have just used a moly grease for all the joints...is this ok? Thanks!

Personal preference for me is synthetic grease, it seems to work better in colder weather.
