I've never been in a 1st gen 4runner so I was wondering if the seats can be taken out when the top is off to use it as a truck bed. If not could it be done with slight modification? What is the interior trim like in the back half of the rig etc.?

 

The seats in the back of a 1st gen 4Runner fold down exactly the same as the ones in your 3rd gen to make a flat bed. I have hauled alot of stuff with the top off and back seats down.
