Red face My aching Head... Updated

Sigh...
After doing my water pump, radiator, t-stat as well as a repack of the fan clutch in my 85 xtracab. I am still having the issue of heating up to almost red then dropping to norm. Just now am I smelling the dreaded sweet smell at startup as well as a bit of coolant loss when I open the cap after it cools down each time... I swear this is driving me to drinking. After all the work I had my mechanic do, (he has done yotas for 27 yrs) I am now $4,500. Deep in this whole truck and still need to do this head gasket as well as the exhaust man. gasket. After all is done I prob wil be $5,500 after labor and parts. It is good that I get parts an labor for a small fraction of average. This seems like a build up but I am just fixing up a daily driver. Now for the question to you all. Why does it run a bit hot then drop to normal? I feel as though I have narrowed it down to the leaky hg but why is it cooling off after running hot? How deep is too deep to go into it before quitting? I am a bit worn out but will have a cool truck in the end

i guess it just depends, how much do u like the truck? while doing a headgakset you might as well do the timing chain, belts, hoses, head machined, theres alot of factors, being 5500 in a 3500 dollar truck seems a little backwards but you also know its all new and would be very reilable for years to comee
