BBQ'ed Veggies
the Hunters Stew reminded me of one my favorite foods to make while camping or BBQing. it can be prepared on either a fire or bbq at home. thanks you Joey UKMyers for showing me how to do this
Serves: 5-6
chop all the veggies into small pieces. build a boat of tin foil, you'll want it about 7-8" long and 4-5" wide. you may need to make multiple boats. fill the boats with the veggies, add about 1/2 bottle of the Zesty Italian dressing per boat. wrap several times with foil. i usually do about 5 or 6 layers. leave some air pocket to allow for steam. add tapitio or crush red pepper for spicy veggies. (i add tapitio to everything) Throw on grill or bed of coal 4 or 5 songs per side (i dont wear a watch, but the stereo is always blasting, ) but really you cant over cook it. remove from heat, cut open the foil and enjoy....

- 2 Green peppers
- 2 carrots
- package of mushrooms
- 1 large white onion
- any other veggie you want to add

Great recipe and super easy. I do something similar and add broccoli crowns cut lengthwise. BUT, it's possible to overcook the broccoli easily and then it gets skunky, so 5 min. per side is plenty.

Oh ya that dish is the shiznit when your camping. A steak and red potatoes cooked with same way only with BBQ sauce instead of zesty italian is tasty too.
