Budget is tough.
Honestly, if you need something to last, and are at all worried about fuel economy, don't run a mud tire, grab a good AT, BFG's are always good.
If you want a mud, Go KM2s or MTR's. They seem to have decent life, are relatively quite on road, and are great offroad.

Moving you're 12.5's from you're 11-12" rims (more likely 10") to 8"s isn't going to make the overall tread pattern that much narrower, you'll likely still rub.

ok im getting confused right now idk wat lift or how tall it is but as of now i could fit prolly 35s without rubbing anything
i just wanted to know if going down to running 12.5s on a 8 wide rim with 3.75 back spacing will it rub the control arms

no, you shouldn't rub on the control arms.
i know a 31x10.5 tire on stock 4.75"bs wheels there is around 1/2-3/4" gap between sidewall and UCA. if you want a 2" wider tire, then you'll need a MINIMUM of 1" difference in backspacing to give the same clearance and hopefully fit without rubbing (= 3.75" backspace). you can go more, like to a 3.5"bs, which is probably more common for a chevy wheel - but then it puts tires further outward = more leverage = more stress (probably similar stresses to what you had with 10-11" wide wheels). for me, a 3.7"bs wheel puts around 3/8" space between UCA and tire (with Toyo's having some of the highest profile sidewall lugs)
where are your tires rubbing now and what is the distance between the center of your hub, to the bottom of fender lip? if you search for one of my past threads on fitment/cutting, you can see where i had to trim my truck to fit my tires on the lowest lift possible - it was front bumper and pinch weld area. doesn't rub under compression/full steer. i strongly doubt 35s will fit without having to tub the firewall/pinchweld area, at least not on my truck.

Toyo MTs for sure. they are a little expensive but they ride like a dream. if you want a more AT tire the Toyo AT 2 is the way to go. Toyo makes the best tires in my opinion and i work at a tire shop and alot of different tires come in and we sell a lot of different brands and toyo is awesome

I run nitto mud grapplers 33/12.50/r17 they ride decently smooth i get great traction on pavement and amazing traction in the mud they also have amazing side tread i havent met a rut i couldnt climb out of whichever tire you pick you also have to consider the psi you wanna run that will affect youre tire greatly mine rated for 60 psi but its way to stiff sp i run them about 45 to 50 ish daily drive and light mudd but when i got heavy trail ridin i like them about 40 to 45 psi tops sadly i cant give you a life expectency they were on the truck when i bought it but like i said run great all around even in snow and have the really agressive look your lookin for good luck hope i can help
