Overland Chef

We just debuted a new column in Overland Journal called "Overland Chef" where we'll feature recipes from editors and readers. The first article in the latest issue (Fall '09) has the following group of recipes:

Starters & Drinks ~ Spiced Nuts and Dried Fruit, Dawas for sipping

Dinner ~ Chicken en Adobo with Tropical Lentil Salad, Grilled Zucchini and Green Chile

Wine Pairing ~ For white, a soave or vernaccia di gimignano; for red, a rioja

Dessert ~ Grilled Mango with Honey

The main course is done with a 2-burner stove and a pressure cooker (Roseann used the GSI Outdoors model).

Chris, that is a great addition to Overland Journal.

I was thinking of getting a Dutch oven, but I am going to take a look at the GSI pressure cooker too.

I dig this kind of stuff, learning new ways to cook in the outdoors.
I generally eat better when I am camping, as I like to go all out, and might as well eat good when you are out in natures living room.

I know nothing about cooking with a pressure cooker, I guess it is time to read up on what kind of food you can cook in them.

Thanks so much, Corey - and take a look at the blog now. We've added "Reader's Recipes" and in the first submission, there's this great-looking FJ camp setup that looks suspiciously like yours!

Roseann, I am sorry I did not see your post before until now.
I was just searching for Overland Journal to post something elsewhere, and I just saw this.

Yes, that rig does look very familiar.
Thanks for getting that recipe in.
It is getting bathed tomorrow to get the winters grime off, and Sunday the tent is getting opened up to wash the bedding.
Getting it prepped for the upcoming camping season.

Can not wait to see the pictures all of you get later from the upcoming Overland Expo.
