what are the standard operating water and oil temperatures, and oil pressure?

I'm looking at getting these guages to better monitor my motor and want to pick ones in the correct temperature/pressure ranges.

the thermostat is 190*F so that is the operating temp, as far as oil pressure, usually that's pretty low once warmed up - often as little as 5psi. When cold it should have ~40psi...
