I am installing the OME lift on my 94 3.0 4x4, and i have a q - the rubber spacers in the middle of the rear coils (are they called the bump stops?) are very large - is there any need for them if I am doing mostly off-roading (in AZ), or is there any benefit to cutting them down?

You can safely cut 1-1.5" off them without any issues. More will significantly harden the shock when you hit them.

 

is there any benefit to cutting them? I am hoping to go to 33's at some point, but not sure if I should do this or not.

Uh, TN answered your question already. I have 33's that are only 10.5" wide, so mine stuff inside the wheel well just a lil bit before the axle touches the bumpstop under full articulation, so cutting them down won't make any difference except if you bottom out at speed. Then it will be a more sudden jolt, but should still do the job. If you're idea of off-roading is rock crawling, or somewhere you'll use the full articulation of your suspension, you may want that bumpstop high so that it'll actually force the front suspension to articulate more. If you let the rear flex really easily, the front won't and your rig won't feel very stable.
