2006 Toyota 4Runner SR5 V8, BIGGER TIRES DESIRED

I'm looking for advice on what I need to do to put bigger tires on my 2006 Toyota 4Runner SR5 4.7/V8. I have added adjustable Bilstein suspension giving the truck a 2 inch lift. A 285/75R/16 has been recommended but I want to ensure it won't rub (or know what other adjustments are required). I assume a 16x8 rim is best for this tire but am open to advice being I am fairly novice. Also, is there a particular after-market rim that would be recommended for this tire so I can replace my stock stuff?
