HO 5.0 or 302?

HO 5.0 or 302?
My sister destroyed my Bill Blass Mk VII last night. Engine compartment still looks good, everything from the radiator forward is in little pieces all over the road but the motor seems to be alright. It is a HO with roughly 130K perfectly maintained with brand new injectors (less than 500 miles)
Then I got my bronco's 302, Edlebrock everything, matched cam, intake, carb and timing. Block and head both rebuilt by a speed shop like probably 20K ago motor looked awsome last time we tore into it to change out the cam and timing.
I really want one of these to go into my carbed '85 but I have never done a swap before. I have two mechanics that will help me out (read: do most of it) but neither are particularly talented at fabrication and aren't real excited about that sort of thing. So they are both willing to do it but I really need to come up with a bullet point list of whats involved. I have found a few good write ups but mostly they seem to lack detail or at least what I think I am looking for.
I did order a Downey catalog and thats supposed to have alot of tech info in it. I also just ordered one of those toyota pick up bibles off amazon for 15 bucks along with some other general motor swap books so hopefully they will help me to.
Anyway which motor should I use? will be driven daily and first time swap? Also is anyone out there willing to answer swap questions I have as I go?
